SAUSAGE & TORTELLINI SOUP
SandwichThis hearty soup is easy to make in your Panasonic Rice Cooker, and it's a real good choice for a main course or a side during the fall and winter. Very tasty! This soup makes a great lunch, and is wonderful served with warm sourdough bread.
Recipe

INGREDIENTS

1 pound sweet italian sausage

1 cup chopped onion

2 large garlic cloves sliced

6 cups beef stock

2 cups chopped tomato

8 oz. canned tomato sauce

1 large zuccini sliced

1 large carrot sliced

1 each med grn bell pepper diced

1 can (12 oz) can whole corn

1/2 cup dry red wine

2 tablespoons dried basil

2 tablespoons dried oregano

10 ounces fresh cheese tortellini

1 can (12 oz) parmesan cheese

INSTRUCTIONS


Remove casings from sausage and brown in your Panasonic Rice Cooker, breaking it up as it cooks. Move sausage to a bowl and drain off all but 1 tbsp of the juice. Add onions and garlic to the juice in the Rice Cooker and saute until translucent. Add back the sausage, tomatoes, sauce, zucchini, carrot, bell pepper, wine, stock, and seasonings and press start on your Rice Cooker. Simmer in your Rice Cooker until veggies are tender.  Add tortellini. Cook until tender (About 6 minutes). Press stop on the Rice Cooker. Season with salt and pepper and serve with a sprinkle of parmesan cheese. NOTE: This soup can be prepared up to 2 days in advance and refrigerated until use.
